Blackened Cayenne Seasoning

If you don’t know by now, I value the quality of my food. Making homemade spice blends is one of my favorites because I know exactly what I’m putting into them.

Tonight I made blackened cayenne flounder with my own spice mix. The recipe is super simple!

Ingredients

  • 1 tbsp garlic powder
  • 1 tbsp onion powder (I used minced onions)
  • 1/2 tbsp paprika
  • 1/2 tbsp oregano
  • 1/2 tsp cayenne (which was still a bit too spicy for me but adjust this to your spice preferences)
  • 1/2 tsp sea salt

For the fish:

  1. I spread a decent sized layer of the spice blend onto each side of the fish and laid them in our well greased (we use avocado oil) cast iron pans on the stovetop. We have a gas stove so I never go above 4.
  2. Leave them to blacken for 5-8 minutes per side. It really depends on your stove, pan, and heat level. I went on the longer side because I didn’t have my heat too high, I like my fish cooked all the way through, and we cook in cast iron. What you’re looking for is a nice layer of the cooked (blackened) spices. In my endeavor, I think the onions ruined the overall look but they certainly didn’t ruin the taste.

Suggested sides:

  • We did a bulgar/quinoa mix which has a wonderful nutty flavor and I add just a pinch of salt to it when cooking. I laid it on a bed a sautéed spinach and mushrooms.
  • Greens! We used asparagus although my original plan was to make steamed broccoli. I think either will do because greens just complement a fish dish.

You can use this spice blend on anything! I hope you use this recipe and enjoy it.
