Just recently my husband admitted he had a sugar problem and said he had to stop with the refined sugar, chocolate, candy, and desserts. I totally agreed with him (one time I caught him sneaking sprinkles!) but I knew how hard it was going to be for him.
Seven days into his “no added sugar” rule, his birthday came. He obviously told me not to treat him but how could I not treat him for his 27th birthday?!
I searched for “healthy desserts,” even considered making a vegan blueberry banana bread (which I have made before and it’s 👌🏻) but I felt he needed something else to keep himself on track.
So here’s what I came up with; and let me tell ya, it was pretty great!
Crust:
- 1.5 cups rolled oats (GF if preferred)
- 1/3 cup flour (GF or regular)
- 1 egg (or 1 flax egg – 1 tbsp flax + 1 tbsp water)
- 3 tbsp maple syrup
Filling:
- 1 cup dairy free plain yogurt
- 1 tbsp maple syrup
- 1/2 cup canned coconut cream
- 1 tbsp chia seeds
- 1 tbsp cornstarch (or potato starch)
Fruit Toppings:
- Any fruit your heart desires
Instructions:
- Preheat oven to 375°. Mix all crust ingredients and push evenly in the bottom of a tart/cake pan. Bake for 25 minutes or until just golden on the edges.
- While the crust bakes, mix together all the filling ingredients and chill covered in the refrigerator.
- Once crust is done and cooled, add filling and spread evenly. Place any fruit you wish to add on top and chill for at least 30 minutes before serving.
So this dessert is definitely not sweet like a standard dessert–but that’s the point. It’s almost like a fancy parfait and it definitely fulfills that sweet craving in a healthy and delicious way. I hope you enjoy it as much as we did!
