Dakota Loaf

When we lived outside of Raleigh nearly 5 years ago now, I was obsessed with a loaf called the Dakota Loaf from Great Harvest Bread Co. Obsessed. As a bread baker, I tried for years to recreate this loaf with different recipes I found online with no success…

…until now.

If you, too, are searching for a soft, seeded wheat loaf, here you have it!


Dakota Loaf Recipe

Yields: 1 loaf

Ingredients:

  • 1 1/4 c. warm water
  • 1/2 c. honey
  • 3 T butter, melted
  • 1 1/2 tsp salt
  • 1 1/2 c. whole wheat flour
  • 1 3/4 c. all-purpose flour
  • 1/2 c. oats
  • 1 1/2 tsp yeast
  • 1/4 c. pepitas
  • 1/4 c. sunflower seeds
  • 2 T flaxseed
  • 1 T poppy seeds

Instructions:

  1. Mix together warm water, honey, and yeast. Let sit until yeast is activated.
  2. Add in the remaining ingredients and knead (by hand or in mixer) until dough is tacky but doesn’t stick to the sides of the bowl. This dough is very moist but that’s what makes it a very soft sandwich loaf.
  3. Let sit covered until dough has doubled in size.
  4. Shape loaf into log shape and place in greased loaf pan. Top the loaf with extra seeds. Preheat oven to 350º F.
  5. Cover loaf and let sit until the top has risen above the top of the pan.
  6. Bake loaf for 45 minutes. It should be golden brown.
  7. Cool on cooling rack and enjoy!
